Security Issues on PDF Form

Hello... I'm new on the forums and I joined cause I have an issue I've been trying to solve...
 
I'm creating a PDF form that includes digital signatures, so I enabled the additional features ... Everything is okay but I need one specific thing...
 
Everyone in the company has a copy of the blank form with the permissions in order to fill it and save it so it can be sent to the next person by email using Adobe Reader (I'm the only one wit Acrobat Professional)... The thing is that I need that once that person (Lets call it person 1) fills and saves the PDF form, it cannot be modified by the next person (person 2) except the signature field, so this person 2 can only check it and sign it if its correct or not sign it if its wrong, but not change the form fields... This person 2 will also save it and send it to the next person (person 3) doing the same procedure of check, sign, save, but sending it back to the person 1, who is the original sender... This person 1 is not able to change the form fields once is signed by the persons 2 and 3, even if its the original sender...
 
Hope I made myself clear and also hope you can help me out...

Use the "Signed" tab of the signature field properties you can set certain (or all) fields to be read-only once the document is signed. Just lock all fields except the signature ones.

Thanks a lot... This really helped me out, so this can be done with any field? Let's say I can put a button to lock the fields once is done, even if its not a sign... I also have another question about routing the form once is signed, but I think this will be more difficult...
