Check Reviewing and select WebDav from the Server drop down menu in the Reviewing Preferences. You have the same preference options in Acrobat 8 as you had in Acrobat 7.

I too have encountered the "disappearing preferences". This seem to have been a bug in Acrobat 7. I would go and set the WebDAV prefs, then next review cycle I would be receiving calls from users telling me it's not working. I would go and reset the prefs and all would be OK, next review same thing!
We are now using Acrobat 8 and switched to a Shared Review, which "just works"!!
