We are truly a beginner stage here at the church and when we purchased and installed adobe 8.0 upgraded to 8.1 professional we had office 2003. In the next few days we will be upgrading to office 2007. In 2003 there are a few menu items that when we installed adobe acrobat pro it installed these tools in windows 2003 and the office tools as well. How will these tools be readded when we install office 2007 and what will we need to do so the upgrade will be easy and successful.

Your best bet for a smooth transition to Office 2007 would be to remove both MS Office 2003 and Acrobat Pro 8.1.
Then, Install Office 2007 first - follow all of Microsoft's instructions with a clean reboot when through, then install Acrobat 8.0 Pro, followed by a reboot.
Acrobat will find 8.1 upgrade upon first lanuch and ask you to install it - go ahead.
If your are clammoring for a faster process, perform the Upgrade to Office 2007 process presented by Microsoft. Then, in Acrobat, under Help, execute the Detect and Repair function. This action will cause Acrobat to rerun through it's installation procedures (settings will not be changed), find the updated version of Office and install the missing PDFMaker Macro toolbar buttons... err.. ribbon elements.
Either way, you may want to check out Dov Isaacs article on setting changes and "tweeks" to the product to make it easier to use. This link is a bit dated, as it is a couple of versions old, but much of the material is still valid.
