Can drop-down lists be dependent? Can the option selected in one drop-down list then dictate which options are available in a second box. for instance if the first box had the option of boy or girl, and the second box were a list of names, could selecting boy in the first drop-down then present a list of boys' names in the second box?

Yes, you can use JavaScripts to add the options for the second fields. See the JavaScript Specification manual for more on writing JavaScripts.
