Chect to see if the field is Locked. You'll see the Locked chakbox on all tabs in the Field Properties. remove the checkmark in order to activate the Appearance options.
When you create or edit a field, use either the tool you used to create/edit the field or the Select Object tool (on the Advanced Editing toolbar). Open a context menu (Right click on Windows or Contrl + click on the Mac). From the menu options, select Properties.
