I have created a form that I would like to use as a stamp on other documents (drawings, submittals, etc.). I would like to be able to update the form fields after the stamp has been applied to the document. Any suggestions?

You are trying to change the way Dynamic Stamps work. The form fields are updated prior to the stamp being placed. Please look at the tutorials about Custom Dynamic Stamps on this site.
