Email submit button

Is there a way to modify the email submit button, so that instead of creating an email with the form as an attachment, it instead creates the email with the form data in the body of the email?

I'm trying to get the information into the body because it goes to a distribution list, and might need to be viewed on a mobile device, so I don't want the data to be hidden in the attachment.
