Didn't anyone notice that after you apply user rights in acrobat the file thumbnail is empty?

Select folder with your pfd files, click on View -> Thumbnails

This is true for livecycle 8.2 (just tried it).

How do make the correct thumbnail to show up?

As long the form is save as a static pdf you will have a thumbnail of a reader enable form too.
This feature is not available for xfa forms until now.

Hmm, I need dynamic forms. Is there a way to replace the icon with third party app?

Not that I know of.
The thumbnails are created by the OS which can't read the content of an XFA form, because the form layout will not be rendered until you open it in Acrobat/Reader.

In this case the thumbnail only contains a white page with this message:

To view the full contents of this document, you need a later version of the PDF viewer. You can upgradeto the latest version of Adobe Reader from www.adobe.com/products/acrobat/readstep2.htmlFor further support, go to www.adobe.com/support/products/acrreader.html

But, this message even appears in thumbnails if you have the latest viewer (Acrobat/Reader 9.3) installed.
Also in the preview mode on Acrobat.com and if you print a XFA form directly on a printer with a PDF print function (from a USB stick for example).
