I would like to know if it is possible to have a file save automatically as soon as it opens?

I use a numerical field to issue a unique form number simply taking the current value and adding one.

Once this increase has happened, how can the form save this info?

Yes, but this will require an application folder JavaScript be installed on each user's computer. see the Acrobat JavaScript API for more information.
