One option is to write a JavaScript that checks the Reader version when the file is opened and display an alert informing the user to up grade Reader.
The simple way is to check the Compatibility tab in the doc properties to make sure Reader 7 is shown and save the form as a Static PDF or Dynamic XML for version 7.
