One can enter individual page numbers easily in header/footer in PDF; can one format [as in MS Word] n of x --> showing individaul numbers [n] & also total pages in file [x]?

In the dialog window for adding header/footer have you looked at the Page Number and Date Format options?
In this item's dialog window the drop down for "Page Number Format:" ought to have the feature you're interested in.
