I don't recall the exact name and placement of the menu option, but under the Document Menu, select Recognize Text using OCR (or some variation of that). Search OCR in the Help tool.
Do this to a scan of a document, and Acrobat will convert the picture of the text to searchable text. When you use the feature, you can set it to keep the document scan in place and layer the searchable text under the image. It gives you the bext of both worlds: The scan and the searchable text.
