Hello.
First I need to mention that I am not sure that calling it "page ID" is correct because I have no idea what it really is, but I made a JPG sample so I can show you.

I would like to know how to add or remove that textfield saying "page number 1" in that picture. Usually I don't see that in PDFs but I found one with this thing enabled and I would like to know how it is called and how to add/edit/remove it PDF documents. Can it be done in Acrobat or would I need another program ?

It's not a part of a document, but a part of the Acrobat/Reader toolbar. You can add/remove it by right-clicking the toolbar, selecting "More tools" (or something similar) and then ticking the check box next to it under "Page Navigation".
I'm not sure what you mean by "editing" it...
