Adobe Acrobat 7.0 Professional Forms question (this is for my job)

We have created a writeable PDF for interoffice personnel for the purpose of filling-out and returning to our department. We would like to get an electronic copy back as opposed to them filling it out and printing. It was also asked if they could fill-out the form, save it, and return to it later to finish filling it out. Our department has Adobe Acrobat Professional (Mac), but everyone else only has Adobe Acrobat Reader(PC). Is there some way to make this work without having to purchase Professional for the entire office?

You'll need more than Acrobat 7. Later versions are capable of adding usage rights to a form, enabling Reader users to save a modified form. So you just need to upgrade that one user who currently has Pro and then Reader-enable the forms.
