In short, no. There's public penetration data on Flash Player on the Adobe website but the equivalent for Reader is confidential, partly because there are 'rival' PDF plugins out there who would kill for the chance to see any gaps in the market!
It's also not as simple to collect Reader versioning as it's not declared in browser headers, and the relatively trivial version sniff in Flash Player (which happens almost every time you hit a site like Adobe) isn't as easy to handle with PDF content. It's doable, but too klunky to run on the quiet for mass-market visitor sampling.
