How can I disable send email from acrobat? I don't want users to be able to use the send email functionality within acrobat.

Remove the 'SendMail.api' from the plug-in folder. Note I did not say delete, move it to a different folder like "plugins_not_used". Then your users will not be able to send mail from any PDF.
