Editable PDF

I have had a request from a client asking for an editable PDF.
Meaning: I supply the final PDF, 200 pages of financial tables, and they may need to change certain figures. They want to be able to do it at their end.

Is there any way to do this?

My Product Information:
Acrobat Pro 8.0, Macintosh

If they have Acrobat and you don't apply security then they can make "edits", but it's not a fully editable document. Changing a few figures here and there using the touch-up text tool isn't a problem, but things like moving a row or re-sorting a column are beyond Acrobat's abilities. They could re-export the tables to Excel, but that rather misses the point of asking for a PDF in the first place.

Your client will also need a full version of Acrobat, they can not use Reader.
