Currently using FDF to extract fields & data from forms. Can FDF get at / extract Document Summary information like Title, Summary? Can you provide any example(s)?

No, FDF can contain a lot of things, including entire PDFs, but metadata is not something that can be specified directly. You can however create a set of hidden fields, then copy the metadata into the hidden fields before submitting.
