Is there a way to insert symbols such as check marks or other characters (ie, arrows, etc) into my Acrobat document I am editing?

You can try using the free text tool. You should be able to created the formatted text in a word processor and then cut and paste into the fee text box. But be aware that any other person viewing the comment will need the font that you used on their system to display the text as the text of an annotation is not embedded as the text in the body of the PDF can be.
