I just designed a elaborate form using Acrobat 8 Prof, but now entering data is a challenge because it does tab to the next cell, in all cases, in the desired order. Is there a way to change/choose the tabbing order?

You can. Open the Complete Acrobat 8 Help (from the Help menu) and search for Tab Order. The first hit should help you out.
