how can I change background color of text?
on picture it is white

Something to try:

Use the TouchUp Text tool to select the character strings.
Open the context menu and select Properties.
In the Text tab, change the Fill color.

Try adding a "Hightlight text" comment, change its color to what you want, and you can then convert the annotation appearance to regular page contents using the "flattenPages" JavaScript document method.

OK, now it's better, but white fields remains, and border around the text appear

That's about the best you can do without editing the source document and creating a new PDF.

that's what i get using foxit reader with only two clicks of mouse:

You can do the same in Acrobat. Select "Edit > Preferences > Accessibility".

I don't know how you get it, but when I add watermark I get all the same result

add the watermark 'on top' and reduce opacity; adjust position and scale as needed

tip: re 'white fields': view navigation panel - content. activate 'highlight content'. delete applicable 'path' elements.

re grammar, be sure to instruct your readers not to use inappropriately the past perfect tense (grossly overused in new york times and bbc and virtually every other place in print and spoken), where the simple past tense is fully meaningful and grammatically appropriate.
