I use Acrobat 7.0 and am considering upgrading to 8. Can I take an existing pdf and edit the text to form columns and it will reflow properly? Can i do this in 7 or do I need 8? Also will all fonts stay the same?

Text editing in Acrobat 8 remains limited as in all previous verions of Acrobat. You're best off returning to the original authoring program to reflow the text.
If the font is embedded in the PDF, whatever you are able to do with text will retain the font information.
