Automatic Meta Tags Creation

I would like to know if it is possible to automatically create Meta Tags for a file when creating an OCR file by analysing the text?

I am trying to find a way to facilitate the use of Zotero with PDF files that I created from web captures from online ressources for academic use. I would love that Zotero would be able to read the Meta Tags to create tags for all my files.

In theory yes, in practice no - unless you have a very specific page layout and can tell Acrobat where the title, author, etc. are on the page it has no way to "read" the document and look for them. OCR is merely a pattern-recognition system, it doesn't understand the first thing about what the words say.

Just a side note: A smart OCR should ask the user in which language the document is written and then use that information to calculate which letter-combinations are more likely to occur in the document.
An even smarter OCR should try to deduce the document's language by itself...
