I often create Acrobat documents from Word, etc. I would like the links in these documents to be displayed as a clickable thumbnail with the thumbnail being the image of what the screen at the target of the link will be. Is there anyway to do that with Acrobat?

You can use a Button Face for a form field Button with an Action assigned to open another page view or another file. The Button Face can be any PDF file on your hard drive. The size of the Button Face conforms to the size of the Button field.

Check out the Options tab in the Button field Properties dialog box. Select Icon Only and click the Choose Icon button to select the Word file converted to PDF that you want to appear for a given button
