Advanced Editing -> Text Color Change

A client wanted to change the color of some text in their ad they had a pdf file already made for. So, I go to change the color of the text from 'white' (knockout) to 100% black. Every time I select the text, then go to the fill properties, I try to use the CMYK sliders to make the text a 100%, it automatically changes the color to a rich black (something like 70,60,60,90). I can't for the life of me change any text in Acrobat 7 Pro to a 100% black, it always gets converted to a rich black immediately after I pick the color (even the color sliders change to a rich black).

Help?

The only thing I've found to work well for these kinds of changes is Pitstop. You can change the colors to whatever you want, set the overprint/knock-out and even open a photo off of the PDF into Photoshop, adjust it and save it back into PDF.

You'll need Acrobat 8 for that to work properly.
