I've noticed the same problem when printing PDFs in Acrobat and Adobe Reader on Vista. The Collated checkbox does not appear in the Print dialog box. This may be a bug in the current version running on Vista.
You might search the user forums to see if this issue has been reported and if the bug has been confirmed by Adobe.

I have the same problem as baultman, and I have not come across other users saying they have the same problem. I was on Adobe's site and they suggested to edit the registry and that does not work either.
I also have the same problem and have searched the forums for collation issues and not found anything relevant. I am using XP Pro, SP2 with Adobe Pro 8.1.1. The collate checkbox is active and can be checked or de-checked but it makes no difference, nothing is collated.
I am running Acrobat 7.0 Professional as well as Adobe Reader 8 on my XP(sp2) machine and I am having the same problem. Neither program will collate. I have been researching this topic for weeks and havn't found any sollution that works yet.
