Is there anyway to tell if a PDF was made from an RBG or CMYK file if it doesn't have an embedded profile? Also, is there anyway to see what the ppi of the PDF was set to?

You can use the tools in Preflight to search for particular things (such as a bitmap with a certain resolution, or an object using spot color). Importantly, whenever you run a Preflight analyze profile, the results pane has a tree showing everything in the document (called Overview). Expand that and you can see what color spaces are defined, fonts, images, gradients etc. for each item in the file.
