Global conversion of CMYK or RGB colors to spot Pantones?

Hi

Unfortunately you would need to use either your authoring application or a third party plug such as Enfocus Pitstop.

You can use Acrobat to convert Pantone to other colour space but but no the other way around unfortunately.
