Hi- it seems like it would be simple but- is there a way to remove a poster from a video and not replace it with a new one? I cant seem to delete them.

With a video annotation there always has to be a poster graphic of some form, but you can replace the one extracted from the footage with one taken from an image file, and so effectively make it whatever you want.
Right-click the annotation, choose properties.. launch settings, and "create poster from file". Whatever was there before is deleted.
Course if you're really sneaky, you can make the poster image look the same as the stuff behind it on the PDF page, so it becomes nearly invisible - but you can't get rid of the little black play icon in the corner.
